At Michael Bakes, we believe bread should be simple: flour, water, and salt. No fillers, no preservatives, and no shortcuts. Just pure ingredients that speak for themselves.
That commitment starts just miles away at Marksboro Mills. By partnering with a local mill dedicated to regenerative agriculture, we source organic grains that are restored from the soil up—nutrient-dense and full of character.
We honor these grains with patience. Through traditional slow fermentation, we unlock deep flavors and enhanced nutrition that mass production simply can’t match. It is a collaboration between farmer, miller, and baker that you can taste in every slice.
Proudly serving nourishing loaves to Morris County.

Michael Bakes was born from a simple belief: that real bread requires real relationships.
Currently, you can find Michael baking every Saturday on-site at Marksboro Mills, working directly where the grain is ground. This close relationship with the miller allows us to understand our flour at a level few bakers can, ensuring that every loaf captures the full potential of the grain.
Now, we are on a mission to bring that same quality back home. Michael Bakes is expanding to serve the Morris County community directly, bridging the gap between local farms and your kitchen table. We are more than just a micro-bakery; we are a neighbor dedicated to feeding our community with honest, slow-fermented sourdough.
